Kevin’s Answer:
Mind mapping was developed by Tony Buzan in the early 1970's. It was originally designed as a note taking method that mirrors more accurately how our brains work (compared to linear outlines). Mindmaps are more visual than other forms of note taking. Maps begin with a picture or phrase in the center of the page. Major ideas or comments are written on lines that are connected to the center image. Additional ideas are connected to the main branches.
Some people's mind maps are very visual and "pretty," others are done in pencil with no images at all. How they look doesn't matter. How they help you plan, think and remember does matter.
In the time since then they have been adapted for a variety of uses including note making. This is how I use mindmaps most often - for brainstorming and planning. I have journals full of maps - both for planning and as notes from sessions I have attended. There is even software available to help you create mind maps!
